Stuffed Tomato
Tomatoes are stuffed with a rich filling and tempered with butter and spices to make them further rich. Stuffed vegetables always give you different pleasure to enjoy the meal. Here is another stuffed Indian curry recipe. Stuffed tomatoes are not much time consuming and you can make it for lunch or dinner. Garnish stuffed tomatoes with bhujia and serve hot.
Ingredients of Stuffed Tomato Recipe
- Medium sized potatoes - 6
- Cherries for garnishing - 6
- Grated cheese for garnishing - 1 Cup
- For the Stuffing
- Grated paneer - 1 Cup
- Grated cheese - 1 Cup
- Fresh cream - 2 Tablespoons
- Small cashew nuts pieces - 2 Tablespoons
- Raisins - 7
- Sugar - 1/2 Teaspoon
- finely chopped Green chilies - 4
- Pepper powder - 1/4 Teaspoon
- Salt to taste
- For the Paste
- Chopped and boiled onion - 2 Cups
- Garlic cloves - 6
- Green chilies - 6
- Chopped ginger - 1 Tablespoon
- Blanched almonds - 10
- Blanched tomatoes - 1 Cup
- For the Gravy
- Oil or ghee - 2 Tablespoons
- Garam masala - 1/2 Teaspoon
- Kasoori methhi - 1 Teaspoon
- Sugar - 1 Tablespoon
- Butter - 2 Tablespoons
- Salt to taste
- Fresh cream - 2 Tablespoons
- Red chili powder - 1 Tablespoon
How to Make Stuffed Tomato
Step 1: Cut a thin slice from the top of each of the tomatoes. Scoop out the center.
Step 2: In a bowl, mix paneer, cheese, cream, cashew nuts, raisins, sugar, green chilies, pepper powder and salt and stuff the tomatoes with it. Keep aside.
Step 3: In the grinder add onions, garlic cloves, green chilies, ginger, almonds and tomatoes and grind them together for the paste.
Step 4: In a pot, heat ghee. Add the paste and fry till oil separates.
Step 5: Add 1 cup of hot water and bring it to a boil.
Step 6: Now, add red chili powder, garam masala, sugar, salt, cream and butter to it.
Step 7: Now, place the stuffed tomatoes in the hot gravy and pour some gravy on the tomatoes.
Step 8: Cook the stuffed tomatoes for 5-6 minutes.
Step 9: Sprinkle the kasoori methi all over the tomatoes.
Step 10: Place the grated cheese on the stuffed tomatoes.
Step 11: Garnish each stuffed tomatoes with the cheery and serve it.
