Ingredients of Vegetable Kolhapuri Recipe
- Frozen peas - 1 Cup
- Frozen mix vegetable - 3 Cups
- Water - 500 ml
- Whole red chilies - 3
- Small piece of ginger - 1
- Garlic cloves - 4
- Chopped coriander Leaves - ½ Cup
- Oil - 4 Tablespoons
- Chopped onion - 2
- Chopped tomatoes - 2
- Turmeric powder - ½ Teaspoon
- Coriander powder - 1 Teaspoon
- Salt - 1 Teaspoon
How to Make Vegetable Kolhapuri
Step 1: Mix the vegetable and peas with water.
Step 2: Cook the mixture in a pan on MEDIUM heat for 10 minutes. Set Aside.
Step 3: Grind together the red chilies, ginger, garlic, green chilies, coriander leaves to a fine paste.
Step 4: Heat pan and add oil. Now add the ground paste then fry it well then add onion, and cook until golden brown.
Step 5: Add chopped tomatoes, turmeric powder, and salt. Fry this mixture for 2-3 Minutes. Stir well.
Step 6: Now add the cooked vegetables and mix it well. Cover and cook on SLOW flame for 5 minutes.
Step 7: Delicious Veg Kolhapuri is ready to serve. Serve hot vegetable kolhapuri with Butter roti or naan, kulcha or rice.
