Sambar Powder

Ingredients of Sambar Powder Recipe
- Pigeon peas (tuvar/arhar dal) - ½ Cup
- Husked Bengal gram (chana Dal) - ½ Cup
- Husked black gram (urad dal) - ¼ Cup
- Cumin seeds - ½ Cup
- Black peppercorns - 2 Tablespoons
- Fenugreek seeds (methi) - 2 Tablespoons
- Coriander seeds - 2 ½ Cups
- Curry leaves - ½ Cup
- Oil - 1 Tablespoon
- Dried red chilies - 2 ½ Cups
- Turmeric powder - 2 Tablespoons
How to Make Sambar Powder
Step 1: In a dry frying pan roast all the ingredients separately, expect oil, chilies and turmeric powder, over a MODERATE heat.
Step 2: Tossing it gently for a few moments. Roast dals till golden and spices and curry leaves till fragrant.
Step 3: Now, add oil to the same pan and fry chilies, tossing gently, till fragrant.
Step 4: Now, let it cool and combine all ingredients including turmeric powder and grind to a fine powder.
Step 5: Store in an airtight container and use it as required.
