- Large potatoes - 2
- Grated processed cheddar cheese - ½ Cup
- Butter - 4 Tablespoons
- Salt - 1 Teaspoon
- Freshly ground black pepper - ½ Teaspoon
- Chopped coriander leaves - ¼ Cup
How to Make Kothimiri Potato Skins
Step 1: First of all, Scrub the potatoes and boil them in their jackets in a large pan until cooked.
Step 2: When the potatoes cooked remove them from the pan and let them cool until you can handle them.
Step 3: Now, cut the potatoes in half lengthwise and scoop out the center using a spoon, leaving a thin wall of flesh.
Step 4: Then place the scooped out potato in a bowl and add the cheese and butter.
Step 5: Now, mash them using a potato masher.
Step 6: After that season with salt and pepper.
Step 7: When this mixture is ready to pile it into potato shells and spread grated cheese on it.
Step 8: Now, place this potato halves on a plate and microwave on high for a minute or until the cheese bubbles.
