Kaju Roll
Diwali is the biggest festival of India, celebrated across all part of India. On the special occasion, we create lots of kind of sweets and snacks to enjoy the celebration. Kaju katli, Mathiya, Mohanthal, and many more sweets and snacks are widely made. Here I am sharing one delicious sweet – Kaju roll recipe. Kaju roll is an almost similar recipe as Kaju katli recipe. Kaju roll is shaped into a roll. Let’s make it together.
Ingredients of Kaju Roll Recipe
- Sugar - 1 Cup
- Cashew nuts - 3 Cups
- Milk - 1 ½ Cup
- Silver leaves (Vark) for decoration - 2
- Powdered elaichi - 1 Tablespoon
How to Make Kaju Roll
Step 1: First of all blend the cashews nuts and milk and make a fine paste of it.
Step 2: Now, mix sugar into the cashews paste and cook it over LOW heat. Keep stirring it till the sugar completely dissolves, then bring to a boil.
Step 3: Keep stirring the mixture over MEDIUM heat, until the mixtures start leaving the sides of pan and becomes a tough paste.
Step 4: Now, remove the pan from the heat and keep it aside to cool.
Step 5: Once the mixture is cold, roll it onto a greased plate, with a greased rolling pin. Roll into a ¼ cm thickness.
To Make the Rolls:
Step 1: In a bowl, add grated almonds, powdered sugar, and powdered elaichi.
Step 2: Cut the rolled kaju into square or rectangles, Place the cashew filling along the width of the rectangle/square and roll them into a cylindrical shape by covering the filling.
Step 3: Tap the roll with your finger to make the roll into shape. Roll it gently to make them into a proper shape.
Step 4: Yummy Kaju Roll is ready.
