Ingredients of Indian Curry Lamb Recipe
- Sweet potato - 1
- Onion - 1
- Lamb - 1 Kg
- Chicken stock powder - 1 Teaspoon
- Curry paste - 1 Tablespoon
- Chickpeas - 300 gm
- Zucchini - 3
- Fresh coriander or chopped parsley - 2 Tablespoons
How to Make Indian Curry Lamb
Step 1: Place onion and curry paste in a dish and cook for 1 minute on MEDIUM-HIGH flame.
Step 2: Place onion, lamb, sweet potato, chicken stock, and stock powder into a 3-liter casserole dish.
Step 3: Cover it and cook for 30 minutes on MEDIUM flame, stirring twice during cooking.
Step 4: Add zucchini and cook for a further 1 to 2 minutes on HIGH flame.
Step 5: Combine lamb, canned chickpeas and stock mixture in a 3-liter casserole dish and cover it.
Step 6: Heat through for 6 to 8 minutes on MEDIUM flame.
Step 7: Stir through coriander and serve hot.
