Ingredients of Gajar ki Launji Recipe
- White vinegar - 150 ml
- Carrots - ½ kg
- Salt - 1 Teaspoon
- Fennel seeds - 2 Tablespoons
- Red chili powder - 2 Tablespoons
- Raisins - 100 gm
How to Make Gajar ki Launji
Step 1: Peel and grate the carrots.
Step 2: Spread in the sun for an hour to dry out the moisture.
Step 3: Meanwhile put sugar and vinegar in a kadhai.
Step 4: Put on slow fire until the sugar is dissolved.
Step 5: Add salt, crushed fennel, and red chili powder.
Step 6: Cook till almost dry. Add raisins and simmer until totally dry.
Step 7: Remove from the heat and allow to cool.
Step 8: Put in a glass jar with a lid. Let it mature for 2-3 days.
Step 9: Serve the Carrot launji as an accompaniment with meals like pickles.
