- Grape seed oil - ⅓ Cup
- Lime juice - 1 Tablespoon
- Cumin seeds - 1 Teaspoon
- Chilli pepper - ½ Teaspoon
- Salt - 1 Teaspoon
- Grated garlic cloves - 2
- Chicken breasts - 2
- For Stuffed Peppers
- Bell peppers - 3
- Chopped yellow onion - ½ Cup
- Chopped tomato - 1
- Uncooked Spanish rice - 5 oz
- Freshly minced cilantro - 1 Teaspoon
- Mexican cheese mix - 8 Tablespoons
How to Make Chicken Fajita Stuffed Peppers
Step 1: In a large bowl, combine grapeseed oil, lime juice, cumin, chili pepper, grated garlic, and salt. Whisk well.
Step 2: Add chicken to the marinade. Set aside for about 15 minutes and let it marinade.
Step 3: Preheat the oven-safe skillet on stovetop over MEDIUM heat.
Step 4: Now, add marinade chicken to the skillet and cook until chicken is fully cooked, flipping if halfway through.
Step 5: Meanwhile, prepare Spanish rice according to the package and set aside.
Step 6: Take cooked chicken breasts out and lay them on a cutting board and dice the chicken enough once it is cooled enough to handle.
Step 7: In the same skillet, sauté chopped onions and tomato.
