Ingredients of Carrot Ginger Soup Recipe
- Carrots - 500 gm
- Chopped onion - 200 gm
- Garlic clove - 3
- Aniseed ( ajwain ) - 1 Tablespoon
- Crushed ginger - 1 Tablespoon
- Coconut milk - 1 Cup
- Basil leaves - 1 Cup
- Olive oil - 1/2 Tablespoon
- Coriander leaves - 1 Tablespoon
- Salt - 1 Teaspoon
- Pepper - 1 Teaspoon
How to Make Carrot Ginger Soup
Step 1: Let Microwave covered at 170°C. Now, Take a microwave safe bowl and add carrots, onion, garlic, salt and 2 – 3 drops olive oil and mix it.
Step 2: Now, spread this mixture on microwave-safe baking sheet and toast it.
To Make Puree
Step 1: Collect all the vegetables, add some amount of water and grind and mix it well.
Step 2: Add this puree in the frying pan. Add coconut milk, basil leaves, salt, and pepper and cook for 10 minutes.
