Ingredients of Australian Fruit Cake Recipe
- Mixed fruit - 1 Kg
- Brown sugar - 1 Cup
- Butter - 250 gm
- Brandy - 4 Tablespoons
- Lightly beaten eggs - 4
- Parisienne essence - 2 Teaspoons
- Plain flour - 1 Cup
- Baking powder - 1 Teaspoon
- Nutmeg powder - ½ Teaspoon
- Cinnamon powder - 1 Teaspoon
How to Make Australian Fruit Cake
Step 1: Combine the first mixed fruit, brown sugar, butter and brandy in a large bowl. Cover and cook for four minutes on HIGH flame. Stirring once. Allow cooling slightly.
Step 2: Stir in eggs and Parisienne essence, followed by dry ingredients.
Step 3: Pour into a greased 20 cm cake container.
Step 4: Cook for five minutes on HIGH flame.
Step 5: Using a 3 cm foil strip, place around the outside of cake plastic container. (This will prevent the outside from overcooking before the center is cooked)
Step 6: Cook a further five minutes on HIGH flame.
Step 7: Stand for ten minutes before turning out.
Step 8: Pour over extra brandy and serve.
